I still remember the first time I had a Filipino adobo and now since that time I have become well versed in Filipino cuisine. Vinegar is a huge component in Filipino cooking and thus I made my own Filipino cane vinegar for this sauce. I made it with the idea of adobo in mind so its main components are cane vinegar, soy sauce, black pepper, and bay leaf. The homemade vinegar and homegrown fresh bay leaves make this so much more special than anything else. If I were to describe this sauce with one word it would be: scrumptious.
